Description
Le Paradou is based in the village of the same name in Provence, around an hour from Marseille, in one of the world's great rosé regions. This wine is made entirely from Cinsault, a southern Rhône and Provençal grape prized for rosé because it gives pale colour, light red fruit and a fresh, delicate profile. The Mediterranean climate is warm and dry, with cooling sea air and the mistral wind keeping the vineyards healthy and the fruit clean. Cinsault is gently pressed and fermented in stainless steel to make a young, primary wine, with no oak and no extended ageing, so the focus is on freshness and immediacy. The colour is pale pink. The nose shows red berries, white peach and citrus peel with white flowers and a light, herbal garrigue character. The palate is dry, light and crisp, with melon and red fruit carried by fresh acidity to a clean finish. Serve well chilled at 8 to 10 degrees.
