Le Domaine D'Edouard makes this Chardonnay in the AOC Côtes d'Auxerre, a cool corner of Burgundy near Chablis, farmed biodynamically and organically. This northern Burgundy site sits on limestone and clay soils, and the cool continental climate keeps the fruit fresh and the acidity firm. The wine was aged for a year using a combination of stainless steel and barrels, with time on its lees. The steel portion keeps the fruit clean while the barrel and lees ageing add texture and a soft, creamy weight, and the lees contact builds a savoury depth beneath the fruit. The colour is bright straw yellow. The nose shows green apple, pear and citrus, with a light floral note and a faint toasty, nutty edge from the barrel. The palate is dry and balanced, with orchard fruit and a soft, rounded texture carried by fresh acidity into a clean, mineral finish. This is a fresh but textured Burgundy Chardonnay that sits between steel and oak. Serve it at 10 to 12 degrees in a white wine glass.







Additional information
The soft texture and fresh acidity suit roast chicken, grilled white fish and a creamy mushroom risotto. It also works with hard, nutty cheeses such as Gruyère. Serve it with cod or a chicken dish in a light cream sauce.
