Description
Le Domaine d'Edouard makes this Aligote in the Cotes d'Auxerre, in the far north of Burgundy near Chablis. The estate is farmed biodynamically. Aligote, Burgundy's other white grape, gives a bright, high acid wine, and here the cool northern climate and the region's chalky Kimmeridgian soils push that freshness further. The wine is aged for twelve months on its lees in large wooden vats, an old, neutral format that adds no oak flavour but lets the wine settle and gain a rounder texture. Time on the lees softens the sharp edges and adds a subtle creamy note while keeping the wine dry and taut. It pours a pale yellow with green tints and shows lemon, green apple, white flowers and a stony, chalky note. The palate is crisp and mineral, with a saline edge and a clean, cutting finish. This is a precise, refreshing white in the classic northern Burgundy mould. Serve it cold, around 9 to 11 degrees, in a standard glass.
