Description
Laurent Ponsot is a respected Burgundy name, and this comes from the Corton-Charlemagne Grand Cru, the great white terroir on the hill of Corton in the Côte-d'Or. The upper slopes carry pale, marl and limestone soils that hold cool moisture and give the wine its taut, chalky minerality and slow ripening. Chardonnay here is barrel aged for thirty months, a long élevage during which the wine rests on its lees. As those yeast cells break down they release mannoproteins that build a broad, creamy texture, while the porous oak allows a slow, measured oxygen exchange that adds complexity and toasty, nutty depth without drying the fruit. The colour is bright gold. The nose is layered, with white peach and lemon over hazelnut, beeswax, toasted bread and a discreet vanilla oak. The palate is full but tightly framed, the barrel richness held by driving acidity and a stony, saline length that carries a very long finish. This will also age further. Serve at 12 to 14 degrees in a large glass.

A wine for lobster or crab in butter, and for richer fish such as turbot or baked salmon, where the barrel weight and acidity meet the richness. It also stands up to roast chicken and mature hard cheeses like Comté.
