Description
A Dailuaine of a 12 year old chosen by the Adelphi bottler, from cask Batch 6, bottled at 46%, one of 2100 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.
It was distilled in large conical necked stills on Bailliemullich Burn water, giving the heavy, meaty spirit at its heart. Ex-Bourbon casks held it, the oak letting the heavy, malty character lead. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. Maturation in the cool north east keeps the rich spirit balanced over the years. It sits near Aberlour, in the heart of Speyside by the River Spey. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
At 46% it is smooth and honeyed. A heavy, malty fruitiness, with a soft vanilla from the oak. Beneath it run dried fruit, malt and a savoury edge. The close is long, fruit over a rich malt. This is one of Speyside's heavier single malts.
