Description
Arquitón is a Garnacha rosé from Las Pedreras, a Gredos project run by Guzmán Sánchez and oenologist Bárbara Requejo, farming old family vineyards near San Juan de la Nava in the DO Cebreros. The Sierra de Gredos is high, granite country, and Garnacha grown on these poor, sandy decomposed-granite soils at altitude gives wines of finesse and freshness rather than weight, with cold mountain nights preserving acidity and aromatic detail. The farming is organic and biodynamic. What shapes this wine in the cellar is six months on its lees in barrel: the spent yeast is kept in contact with the wine and stirred or left to settle, releasing mannoproteins that build a rounder, creamier texture, while the barrel allows slow oxygen exchange that adds a gentle savoury complexity without strong oak flavour. The colour is a pale to medium pink, with aromas of wild strawberry, red cherry and white peach over dried herbs, a faint almond note and a bready hint from the lees. The palate is dry and textured, fresh but with real depth and length. Serve at 10 to 12 degrees.
