Las Mulas is Torres’ Cabernet Sauvignon from the cool Itata Valley in southern Chile. Six months in oak give a vivid, fruit-driven red with blackcurrant, plum, a green herbal edge and firm, fresh tannin.
Description
Las Mulas Cabernet Sauvignon is made by Torres from fruit in Chile's Valle de Itata, a cool, old-vine region in the country's south. Itata's coastal influence and granite soils give a longer, cooler ripening season than Chile's warmer central valleys, which preserves acidity and the classic Cabernet markers of blackcurrant and a leafy, herbal lift. The relatively poor granitic soils keep vigour in check and concentrate the fruit. After fermentation the wine spends six months in oak barrels, a short maturation that rounds the tannins and adds a light vanilla and toast frame while keeping the focus on bright, primary fruit. The colour is deep ruby with violet tints. The nose shows ripe blackcurrant and plum with redcurrant, a touch of mint and cracked pepper. The palate is medium to full bodied, with the firm, fresh tannin and structure typical of cool-climate Cabernet and a savoury, earthy finish. Serve at 16 to 17 degrees. It is a natural partner for grilled beef and lamb.
