Description
Las Moradas de San Martín works in San Martín de Valdeiglesias, in the western hills of D.O. Vinos de Madrid, farming the 20 hectares of Pago de los Castillejos organically and biodynamically since the start in 1990 and certified organic in 2017. Initio is the winery's first organic red, made from Garnacha Tinta. These are high vineyards on granite and sandy soils, where the altitude and granite give a wide day to night temperature range that holds freshness in a warm climate; Garnacha ripens fully here and reaches a generous 15 percent. The wine is aged for 14 months in French oak barrels, where measured oxygen exchange softens the tannins and adds gentle spice while the focus stays on fruit. It is medium to deep ruby with aromas of ripe red berries, plum and a touch of black pepper over dried herbs and a stony, mineral base. The palate is warm and generous, with ripe fruit, supple tannins and a long, savoury, peppery finish. Serve at 16 to 17 degrees and decant. It suits roast and grilled meats and roasted vegetables.
