Description
Albillo Real is a monovarietal white from Las Moradas de San Martín in D.O. Vinos de Madrid, made in the San Martín de Valdeiglesias subzone in the hills west of Madrid, Spain. Albillo is the region's principal white grape, and here it takes the lead as a single-variety wine. The vineyards sit at altitude on granite and sandy soils, and this elevation brings wide day to night temperature swings that slow ripening and hold acidity, giving the wine freshness to balance its weight. Farming is organic and biodynamic. The wine is fermented and aged eight months on its lees in barrel, a step that builds texture and a savoury, nutty complexity: the lees add roundness and mouthfeel while slow oxygen exchange through the wood adds a subtle spice without heavy oak flavour. It shows a pale gold colour, with white peach, pear and citrus peel on the nose over almond, honey and a light wood spice. The palate is dry and full, with a creamy lees weight, a fresh mineral line from the granite soils and a long, faintly nutty finish. Serve at 10 to 12 degrees. It suits richer fish, roast poultry and pork.
