José Pariente ferments Las Fincas in new and one year old French oak from old low yield Verdejo vines in Rueda. Seven months of bâtonnage give ripe stone fruit, toast and a creamy, textured palate.

Description
Las Fincas de José Pariente is a single variety Verdejo from the DO Rueda, made by Bodegas José Pariente from old, low yielding vines. Rueda sits high on the Duero plateau, where altitude and a wide daily temperature range give Verdejo its acidity and aromatic detail even in a barrel aged style, while the old vines contribute concentration and low yields. This is a worked, barrel led wine rather than a fresh tank Verdejo. Fermentation takes place in new and one year old French oak from several coopers, followed by around seven months of bâtonnage, the wine kept in permanent contact with its lees. Stirring the lees releases mannoproteins that build a creamy, rounded texture and add savoury depth, while the oak lends structure and gentle toast. It then moves to stainless steel for a further five months to settle and integrate. Expect a bright gold wine with a nose of ripe white peach and pear over vanilla, toasted bread and a balsamic, herbal edge noted at source. The palate is full and dry, creamy but fresh, with a nutty, long finish. Serve at 11 to 13 degrees.
