Description
Finca Las Caraballas farms an organic estate at Medina del Campo, in Valladolid, the traditional home of Verdejo in Castilla y León. The property was created to restore an old plot of around 145 hectares, with some sixty hectares now under vine. Verdejo is grown here on the high, dry Castilian plateau, where the wide gap between hot days and cold nights preserves acidity and the grape's characteristic herbal, aniseed lift. This wine is fermented in stainless steel and bottled early, a deliberately reductive approach designed to keep the wine fresh and to show the variety clearly, with no oak and no oxidation to blur the fruit. The colour is a vibrant straw yellow with green reflections. The nose leads with lemon and lime, green apple and a fennel-like herbal note over white flowers. The palate is dry and crisp, with juicy acidity, a faintly bitter twist on the finish that is typical of good Verdejo, and a saline, moreish close. Serve well chilled at 8 to 10 degrees. It is an easy all-rounder with fish, shellfish and salads.
