Description
Zafra Master Series comes from Las Cabras in Panama, a column still molasses rum carrying a thirty year age statement from a 1985 distillate, matured in ex-bourbon wood and bottled at 40%. It sits at the mature, refined end of the soft Panamanian school of the Spanish style.
The long ageing brings balance, with vanilla, caramel and oak on the nose, dried cherries, sultanas, honey and a bourbon edge on the palate, and a round, smooth finish carrying vanilla, baking spice and a touch of nutmeg. The sweetness reads well integrated rather than sticky, lending a dessert-like richness to a polished glass. For drinkers who enjoy sweet Spanish style rums and want a more mature, finessed version, it makes a logical, satisfying neat pour for a relaxed evening.
