L’Archetipo farms Primitivo in Salento under synergistic agriculture, biodynamic and natural. This rosato spends seven months on its lees in steel, giving a deep, intense pink of ripe cherry, plum and a savoury, textured finish.
Description
L'Archetipo is the Dibenedetto family estate in Salento, in the far south of Puglia, farmed organically since the 1980s and now worked biodynamically with a synergistic approach that lets the vineyard run as a balanced ecosystem. This rosato comes from Primitivo, the deep, ripe grape that defines the region's hot, sun-drenched plains. The fruit is pressed with short skin contact to draw colour and red fruit, then fermented and rested seven months on its lees in stainless steel, with no additions in keeping with the natural style. That extended lees contact builds texture and a savoury depth while the steel keeps the fruit fresh and the wine free of oak. The result is a deeply coloured, intense rosé, with ripe strawberry, cherry and plum lifted by a floral note and a touch of pepper. The palate is dry and full, the warm Salento fruit given weight and a faintly savoury grip by the lees ageing, closing long and textured. This is a rosé with the body of a light red. Serve at 9 to 11 degrees with grilled meats, tomato-based dishes and spiced food.
