Lagar de Cervera is a Rías Baixas Albariño from the Viña Cervera vineyards in O Rosal, made by Lagar de Fornelos of the La Rioja Alta group. Hand harvested and gently pressed cold, it shows lemon, green apple and a saline edge.

Description
Lagar de Cervera is a single-variety Albariño from Rías Baixas, produced by Lagar de Fornelos, part of the La Rioja Alta group, from the Viña Cervera vineyards in the O Rosal sub-zone. The Atlantic climate here is cool and wet, and the granite and sandy soils drain quickly, giving Albariño its high natural acidity and marked salinity. Grapes are picked by hand and carried to the winery refrigerated in small twenty-kilogram cases to keep the fruit intact. After destemming, the must is pressed gently at around ten degrees to protect the aromatics, then settled and fermented cool in stainless steel with no oak, which keeps the fruit clean and the texture fresh. The result is pale straw with a green tint. The nose is lemon, green apple and white peach, with white flowers and a sea-salt lift. The palate is dry and taut, with citrus-peel bite and a saline, mineral finish. Serve well chilled at around 8 to 10 degrees in a standard white glass. A natural match for shellfish and grilled white fish, and a clean aperitif on its own.
