Description
Lady of the Sunshine farms biodynamically in the Edna Valley on California's Central Coast, one of the cooler and more maritime growing areas in the state, where fog and ocean air draw out a long, slow ripening season. That cool climate keeps bright acidity and a mineral edge in the fruit. This white blends Sauvignon Blanc with Chardonnay, both fermented in barrel and aged for seven months on the fine lees. Fermenting in wood rather than steel gives a rounder texture, and the lees ageing adds a subtle creaminess and depth through the release of mannoproteins, while the neutral barrels keep any oak flavour in the background so the fruit and site stay clear. The colour is pale straw. The nose is fresh and precise, with lemon, green apple and white peach lifted by white flowers and a hint of citrus peel. The palate is crisp and driven by coastal salinity, with a fine texture from the lees and a clean, saline finish. Serve chilled at 9 to 11 degrees.
