Description
Lady of the Sunshine farms this single vineyard, Chene, biodynamically in the Edna Valley on California's Central Coast. The valley opens toward the Pacific, and the constant fog and sea breeze make it one of the coolest Chardonnay sites in the state, giving fruit that ripens slowly and holds high natural acidity. The wine is fermented in barrel and aged ten months on its fine lees. Barrel fermentation and the extended lees contact build a creamy, complex texture through lees autolysis and the release of mannoproteins, while regular contact with the lees also protects the wine and adds a subtle nutty depth. The neutral barrels contribute a light spice and gentle oxygen exchange rather than heavy oak. The colour is bright straw-gold. The nose gives white peach, pear and lemon over a note of hazelnut, honey and a whisper of vanilla. The palate is rounded and creamy but kept lively by coastal acidity, with a saline, mineral finish that marks the cool site. Serve at 11 to 12 degrees.

Additional information
The creamy texture and cool-climate acidity make this a match for lobster and crab in butter, and for roast chicken in a cream sauce. It also suits firm white fish such as cod, and aged hard cheeses. Try it with grilled scallops.
