La Volaina is Celler Credo’s biodynamic Parellada from the Penedes, the still-wine arm of the Recaredo family. At 9.5 per cent alcohol it is a delicate, low alcohol white with green apple, pear and a chalky freshness.
Description
La Volaina comes from Celler Credo, the still-wine project of the Recaredo family who are among the leading names in traditional-method sparkling wine in the Penedes. The estate farms organically and biodynamically across all its plots and champions the native grapes of the region, here working with Parellada in a limited bottling. Parellada is a late-ripening variety suited to the cooler, higher sites of the inland Penedes, and the calcareous soils typical of the zone give the wine its chalky mineral backbone. Picked to protect freshness, the fruit yields a wine of only 9.5 per cent alcohol, a deliberately light and low alcohol style that keeps aromatic delicacy to the fore. Fermentation is clean and reductive with no oak, preserving the grape's floral, orchard-fruit character. The wine is very pale with green glints. The nose is gentle, with green apple, pear and white flowers alongside a note of chamomile and fresh dough. The palate is light and dry, its modest weight carried by bright acidity to a crisp, saline finish. Serve well chilled at 8 to 10 degrees as an aperitif or with light seafood, fresh salads and young goat cheese.
