Description
La Venenosa Raicilla Tabernas is a Jalisco agave spirit from Esteban Morales, drawn from one of the small tabernas that give the bottling its name. It is made from Chico Aguiar, a wild form of Agave angustifolia, the same species at the heart of much coastal raicilla, which leans brighter and fruitier than the funkier sierra agaves.
The agave hearts are roasted traditionally in a stone and wood oven, then fermented with natural yeast in oak vats before a double distillation in a stainless steel Philippine still. The result balances citrus, herb and a whisper of smoke. The nose is fresh and grassy with a peppery, spicy lift and a light vanilla note, while the palate is soft and creamy with fresh fruit and delicate vanilla and agave tones, closing with a balanced finish of medium length. Bottled joven at 44.2%.
