La Venenosa Raicilla Sur Volcanes de Jalisco is a sierra style raicilla from Esteban Morales, made from cultivated Cenizo agave that needs eight to twelve years to mature and grows at around 1200 metres above sea level. It sits in the brand's volcanic southern Jalisco range, distilled in clay pot stills that lend the spirit a softer, more mineral texture.
The profile is earthy and rustic in the mountain manner. The nose carries dusty earth, herbal and game notes, citrus and lactic fruit aromas folded into a deep earthiness. The palate brings fine notes of burnt agave with a vegetal freshness, before a notably dry finish. Bottled joven at 45.5%, it leans into the savoury, mineral character of cultivated highland agave and the clay still rather than fruit forward sweetness.
