Description
La Venenosa Raicilla Sierra del Tigre is a mountain style raicilla from Jalisco, the brand built by chef Esteban Morales to bring these clandestine western agave spirits to a wider audience, each bottling from a different tabernero and agave. This one is made from wild Inaequidens, the agave known locally as bruto, whose sap irritates the skin and which can take close to 27 years to reach maturity in the high sierra above 2000 metres.
Raicilla from the sierra runs wild and funky, and this is the benchmark for that character. The nose carries a striking lactic, blue cheese note that will not be for everyone, while the palate turns to chocolate and dried cherry with a voluminous sweetness and fruit that opens after a few seconds on the tongue, closing with a citrus edge. Bottled joven at 44.3% to keep the agave and the open ferment front and centre.
