Description
Arrayán works in Méntrida, in the granite pastureland south of Toledo, a warm continental corner of Castilla La Mancha marked by holm oak, dry heat and poor sandy granite soils. Those soils and the altitude give the native Albillo grape a stone fruit ripeness balanced by fresh acidity from the cold nights. Albillo Real is a textured, fairly neutral white that responds well to careful ageing. Here the wine spends seven months in barrel, where lees contact and the wood build a rounder, creamier texture through the release of mannoproteins and add a light toast, while the slow oxygen exchange through the oak adds depth without heavy oak flavour. The colour is bright straw gold. The nose shows white peach and pear with honey, white flowers and a soft almond and vanilla note from the barrel. The palate is medium bodied and rounded, the barrel weight carrying ripe orchard fruit to a gently nutty, dry finish. Serve at 10 to 12 degrees.

Additional information
Pour it with roast chicken or baked white fish, where the barrel weight and stone fruit suit the dish. It also matches roasted root vegetables and hard nutty cheeses such as aged Manchego.
