Description
La Salada is the personal project of Toni Carbó, a winemaker at Mas Candí, working in Pla del Penedès near Barcelona under D.O. Penedès. L'Ermot is made from Macabeo grown on vines planted by Toni's grandfather, on calcareous clay soils farmed organically without herbicides or pesticides. Penedès sits inland from the Catalan coast, and the limestone-rich soils together with cool nights give Macabeo its fresh, mineral profile. The grapes are pressed lightly and left to ferment with their own native yeasts in stainless steel, a low-intervention approach that keeps the wine true to its fruit and free of oak. It is then aged on its lees, which lends a subtle texture and a rounder mouthfeel while the wine stays bright and direct. This is a natural wine made for freshness rather than weight. Expect a pale colour and a fruity nose of green apple and pear with hints of white fruit and white flowers, and a lively, saline palate of citrus and orchard fruit over a clean, dry finish. Serve well chilled at 8 to 10 degrees. Natural and vegan.
