Description
Papa Rouyo is a young Guadeloupe agricole producer, and this Brut d'Alambic 120 jours, bottled by La Maison du Whisky, names its 120-day fermentation, a long ferment that builds aromatic intensity in the spirit. Pressed from fresh sugar-cane juice and left unaged, it is a blanc that puts the raw cane front and centre.
Distilled on a pot still rather than the usual column, it carries a fuller, wilder expression: citrus, sugar-cane, green apple and a herbal lift on the nose, then a dry, floral palate of lemon and cane and a fresh, citrus-and-herb finish. There is a strong saline, almost electric edge that marks it out as one for drinkers who enjoy atypical, terroir-charged blancs. At a fierce 66.5% it is intense and uncompromising, a vivid white agricole built for those who want character over polish, neat or in a punchy Ti' Punch.
