Description
An artesanal joven mezcal from wild Agave cupreata, known locally as Chino, the signature maguey of Michoacan and Guerrero. It is made by the Perez Escot family at Destiladora Las Azucenas in Etucuaro, near Villa Madero, where four generations have distilled on the same ground since 1910. La Luna, founded by Salvador Chavez, draws on this single family operation high in the mountains.
The piñas are roasted in a stone lined horno fired with estate grown white oak, milled by hand, then fermented naturally in open wooden vats under the open sky. Double distillation follows in a Tarascan still built from copper and pine. Because production is by hand the strength shifts batch to batch. The profile is fruity and faintly spicy, with passionfruit, lemon and pineapple over notes of tobacco, pine resin and fresh mint, finishing earthy and savoury.
