Julia Casado, known as Julia La del Terreno, makes Ninja de las Uvas Blanco in D.O. Bullas in Murcia, working to rediscover a southern Spanish tradition of white wine that had all but vanished. The wine is single-variety Macabeo, fermented and macerated on its skins so the juice draws colour, phenolics and grip, then aged nine months on its lees. Bullas sits at altitude in the Murcian interior, where elevation and a strong day-to-night temperature swing preserve acidity in a hot region, holding the wine's freshness against its skin tannin. The extended lees ageing adds texture and a savoury depth as the spent yeast cells break down and release mannoproteins, softening and broadening the palate. The colour is amber. The nose shows apricot and dried herbs, almond, citrus peel and a beeswax note, with an earthy undertone. The palate is dry, textured and savoury, the skin contact giving a firm grip and the lees a rounded mid-palate, finishing long and stony. Serve at 11 to 13 degrees in a wide glass.
