Description
La Conreria d'Scala Dei sits in the Priorat, one of Spain's most dramatic wine regions, at the foot of the Montsant mountain range. The estate takes its name from the country houses that once served the Scala Dei monastery, where Carthusian monks planted the area's first vines in the twelfth century. This white is made from Garnacha Blanca, a variety well suited to the region's warm, dry climate and its distinctive llicorella soils, the slate and quartz terraces that force the vines deep for water and lend the wine a firm mineral drive. The heat of the growing season builds ripe stone fruit and body, while the altitude and cool nights preserve enough acidity for balance. The wine is aged eleven months in oak, where slow oxygen exchange rounds the texture and the fruit resting on its lees gains breadth and weight. The result is a full, textured white showing white peach, apricot and melon over almond, dried herbs and a light honeyed note, its rich palate closing on a stony, saline finish. Serve at 11 to 13 degrees in a large glass.

Additional information
The body and stone fruit suit baked white fish, roast chicken and roasted root vegetables. It also carries hard nutty cheeses and richer Mediterranean dishes with herbs. Serve at cellar temperature in a broad glass.
