Description
La Bota de Manzanilla Pasada Capataz Cabo 110 is a Sanlúcar de Barrameda bottling from Equipo Navazos, a project that selects exceptional casks from established Andalusian bodegas. It is made from Palomino grown on the chalky albariza soils of the Jerez region, whose pale limestone retains winter rain and reflects sunlight, holding the vines through the long dry summer. The base wine is fortified to around 15 to 16 percent and aged biologically under a veil of flor yeast in the criaderas and soleras of Sanlúcar, where the cool, humid Atlantic air keeps the flor active year round. A Pasada is a Manzanilla taken to an older stage, where the flor begins to thin and a measure of oxidative character creeps in, adding nutty depth to the saline freshness. The wine is pale to deep gold, with a nose of sea salt, dried apricot and almond over a yeasty base. The palate is dry, powerful and balanced, saline and flavoursome with a long, mineral finish. Serve cold at 8 to 10 degrees in a white-wine glass.
