Description
L. Marsolle Domaine de Severin No. 07 Chataignier Finish is a cane juice rhum from Domaine de Severin in Guadeloupe, bottled by L. Marsolle. The Chataignier name points to a chestnut wood finish, an unusual touch on top of the base ex-bourbon ageing, drawn from the 2021 vintage with around three years in oak.
Distilled from fresh-pressed sugar-cane juice on a column still, it is bottled unsweetened at 45%. Guadeloupe sits under the looser IGP rather than the Martinique AOC, but the spirit is true agricole. Expect a grassy, herbaceous core with vanilla and oak spice, the chestnut finish adding a drier, slightly tannic, nutty edge to the young rhum.
