Description
Weingut Künstler farms the Rheingau, the classic German Riesling region along the Main and Rhine, and has run its cellar since the family resettled here in the twentieth century. The vineyards sit on slate, quartzite and loess soils that warm quickly and drain hard, pushing the vines to ripen fruit while holding onto acidity. A continental climate with wide day to night temperature swings preserves aromatics and gives the wine its cut. This trocken bottling is fermented dry, so the natural sugar converts fully to alcohol and the fruit is framed by tension rather than sweetness. Ageing in wood softens the texture slightly and adds a light savoury depth without covering the variety. The colour is pale green gold. The nose leads with lemon, green apple and white peach over wet stone. The palate is dry and linear, carried by fresh acidity, with pear, citrus peel and a saline finish drawn from the mineral soils. Serve well chilled at 8 to 10 degrees in a white wine glass.

Pour it with grilled trout, Dover sole or a plate of oysters, where the bright acidity works like a squeeze of lemon. It also handles roast chicken with lemon and thyme, and cuts through creamy potato gratin and green salads.
