Description
Kuemmerling is a German herbal liqueur whose recipe traces to 1921, when the travelling pharmacist Hugo Kummerling in Deesbach, Thuringia, developed his first alcohol based herbal mixture. The recipe was carried on and the production later rebuilt in Bodenheim near Mainz, and the bottling rests at 35%. The top secret blend is based on natural ingredients, the breadth of the herbal mix giving it its unmistakable semi bitter flavour and placing it firmly in the bittersweet digestif tradition.
The nose carries liquorice, cinnamon, cloves, spices and mint, the palate is semi bitter with liquorice, angelica root, cloves and spearmint, finishing long and semi bitter. Behind the bar it brings herbal bitterness, warm spice and a liquorice depth, the way a bittersweet digestif does, which lets it stand neat as an after dinner pour or stretch into a long drink. It is traditionally enjoyed neat over ice or lengthened. Serve it well chilled to show the herbal structure.
