This sparkling wine comes from the Crimean peninsula, a long standing wine region on the northern Black Sea coast. It is made in a medium dry style, closest to a demi sec, with a balanced sweetness set against fresh acidity. The wine is produced by tank fermentation and finished with a fine, persistent bead, giving an easy, approachable fizz built for celebration rather than austerity.
The wine is golden with subtle amber highlights and a fine perlage. The nose shows ripe apple, pear and white flowers, with a subtle honey note in the background. The palate carries a gentle sweetness balanced by citrus freshness, with yellow orchard fruit, a hint of almond and a smooth, lively mouthfeel. The finish is soft and clean. Serve well chilled at 6 to 8 degrees. It works as an aperitif and pairs well with lighter poultry and creamy pasta, and with fresh fruit or a simple dessert such as panna cotta for those who prefer it sweeter.
