Description
Koval works out of Chicago, distilling from organic grain in small batches, and this expression takes the unusual step of resting the finished gin in charred oak. Where most gin goes straight from still to bottle, this one matures in burnt barrels, picking up colour, depth and a set of sweet, spicy notes more often associated with whiskey. The result is a genuine hybrid, juniper and botanicals meeting cask character on equal terms.
The nose pairs fine juniper with sweet vanilla, soft wood and a hint of citrus. On the palate spicy herbal notes meet caramel, honey and toasted oak, the juniper still present but elegantly rounded by the barrel, before a long, smooth finish balances sweet vanilla against dry juniper and wood. It shines in a barrel-aged Negroni or a gin Old Fashioned.
