Signatory bottled this 16 year old 2008 Knockdhu for its Cask Strength Collection from Oloroso cask 7, an outturn of 677 bottles. The distillery bottles as anCnoc; independents fall back on the old Knockdhu name; it sits in Banffshire.
Knockdhu runs a single pair of stills. Matured in a single Oloroso cask over sixteen years, the sherry wood pulls the malt towards dried fruit.
Cask strength, 56.9%. The Oloroso gives dried fruit, melanoidins reading as fig and raisin. On the palate, a cooked vegetable note, a kippery edge and a vegetal note. A sherried independent single cask.
