Decadent Drinks bottled this 16 year old 2006 Knockdhu for its Whisky Sponge series, matured in ex-Bourbon at cask strength, an outturn of 321 bottles for France. The series is known for its playful labels and careful cask selection. Knockdhu, near Knock in Banffshire, sells its own malt as anCnoc; independents use the distillery name.
Quiet for years, the distillery reopened in 1989. Sixteen years in a single ex-Bourbon cask deepen the malt with vanilla and soft spice.
Cask strength, 55%. Bourbon oak gives vanilla and coconut, with the full strength pushing the fruit forward. A characterful Whisky Sponge single cask.
