Signatory bottled this 11 year old 2008 Knockdhu for its Un-Chillfiltered Collection at cask strength, from Oloroso cask 10, an outturn of 626 bottles for Germany. Knockdhu, in the Banffshire countryside, bottles its own malt as anCnoc, while independents use the distillery name.
It has run under Inver House since 1989. Matured in a single Oloroso cask over eleven years, the sherry wood pulls the malt towards dried fruit.
At cask strength, 57.8%. The Oloroso gives dried fruit, melanoidins reading as fig and raisin. On the palate, citrus, fresh fruit, new wood, vanilla and a vegetal edge. A sherried independent single cask.
