Killik S.B.S (Single Origin Rum)

This Killik is a single origin white rum bottled under S.B.S, the purist Single Barrel Selection line from the Danish house 1423 World Class Spirits. The S.B.S identity is the headline: single cask, full proof, no added sugar, no colouring and non chill filtered, letting the distillate speak for itself. Killik is a lesser known Australian distillery, and this is an unaged, molasses based pot still spirit.

Unaged it may be, but restrained it is not. The nose is intensely fruity and estery, led by wild strawberry, while the palate turns creamy with strawberry, yoghurt and cream over a light, fermented funk that builds as it sits. Pot distillation and the high ester character give it real intensity for a white rum, and at 57% it is concentrated and lively. It is a treat for curious drinkers who love ester driven whites, rewarding neat for the sheer fruit and outstanding in a Daiquiri or other bright cocktails.
