This Small Batch No. 2 is a limited selection from Kilchoman, vatted from ex-Bourbon, Oloroso and Sauternes casks. An outturn of 1,800 bottles for France. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.
Every stage from malting to bottling happens at Rockside Farm. Matured across ex-Bourbon, Oloroso and Sauternes casks, the three woods layer vanilla, dried fruit and a honeyed sweetness.
Bottled at 47.2%. The ex-Bourbon gives vanilla, the Oloroso dried fruit, the Sauternes honeyed apricot, while peat phenols carry the smoke. The recorded note is smoke over the layered base. A multi-cask small batch.
