This Single Cask Release is a 7 year old from 2018, matured in ex-Bourbon and Marsala, cask 18/883. An outturn of 252 bottles. The Wills family's Kilchoman, founded in 2005, is the only farm distillery on Islay.
The distillery follows its barley from field to bottle on the one Islay farm. Matured in a single ex-Bourbon and Marsala cask, the fortified wine wood adds a caramelised sweetness.
Bottled at its natural cask strength of 55.2%. The ex-Bourbon gives vanilla, the Marsala caramelised brown sugar, while peat phenols carry the smoke. A Marsala-influenced single cask.
