Description
This Single Cask Release is a 7 year old from 2011 matured in Pedro Ximenez, cask 693. An outturn of 251 bottles for Italy. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured in a single Pedro Ximenez cask, the wood pulls the young peated spirit deep into sweet dark fruit.
Bottled at its natural cask strength of 57%. The PX lends raisin and date through its melanoidins, the peat phenols a smoky layer. The recorded notes run to chocolate, cooked fruit, a cooked malt note, dried fruit, an oily texture and a sherried character. A rich PX single cask for Italy.
