Description
This Single Cask Release is a 6 year old from 2011 matured in Pedro Ximenez, cask 325. An outturn of 261 bottles. Anthony Wills founded Kilchoman in 2005; it is the only farm distillery on Islay.
The distillery follows its barley from field to bottle on the one Islay farm. Matured in a single Pedro Ximenez cask, the sweetest of the sherry styles, the wood pulls the young peated spirit towards dark fruit.
Bottled at its natural cask strength of 56.9%. The PX lends raisin and date through its melanoidins, the peat phenols a smoky layer. A young PX single cask.
