This Sauternes Cask Matured 2024 Edition is a 5 year old matured in Sauternes wine casks, part of the distillery's annual Sauternes release. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.
Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in Sauternes casks, the sweet wine wood adds honeyed fruit to the young peated spirit.
Bottled at 50%. The Sauternes gives honeyed apricot and candied citrus while peat phenols carry the smoke. The recorded notes run to malt sweetness, leather, fresh oak, smoke, a coal-gas edge and citrus. The 2024 Sauternes farm malt.
