Description
This New Spirit bottling is a 2 year old from 2007, a single cask of Kilchoman's early make, not yet fully matured whisky but a record of the young farm spirit. From cask 05, released for France. Kilchoman is Islay's only farm distillery, the first new distillery on the island in over 124 years when Anthony Wills founded it in 2005.
Kilchoman malts its barley on site and bottles on the farm, a barley to bottle approach rare in Scotch. Filled into a single ex-Bourbon cask, the spirit was bottled very young.
Bottled at its natural cask strength of 62.6%. The peated young spirit shows raw smoke and cereal with only a light touch of the ex-Bourbon wood. An early snapshot of Kilchoman's make.
