Description
This Maury Cask Matured release is part of Kilchoman's Uniquely Islay Series for 2026, the island malt finished in Maury wood, a sweet fortified red wine from the south of France. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.
Kilchoman malts its barley on site and bottles on the farm, a barley to bottle approach rare in Scotch. Matured in ex-Bourbon and finished in a Maury cask, the fortified wine wood adds a sweet, dark fruit to the young peated spirit.
Bottled at 50%. The Maury cask gives sweet red fruit and a raisined depth while peat phenols carry the smoke. The recorded notes run to smoke, chocolate, dried fruit, a dry sandy edge, citrus and cooked fruit. A Maury-finished farm malt.
