This Kilchoman Le Comptoir Irlandais is a Small Batch for the French retailer, vatted from ex-Bourbon, Oloroso and Cognac casks. An outturn of 1,260 bottles. The Wills family's Kilchoman, founded in 2005, is the only farm distillery on Islay.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured across ex-Bourbon, Oloroso and Cognac casks, the Cognac wood adds a grape-led sweetness to the bourbon and sherry.
Bottled at 50.6%. The ex-Bourbon gives vanilla, the Oloroso dried fruit, the Cognac a grape sweetness, while peat phenols carry the smoke. A multi-cask small batch for a French retailer.
