Description
Genesis is a Kilchoman series tracing the steps of whisky making, and this is Stage 4, Mashing, matured across ex-Bourbon, Cognac and Oloroso casks. An outturn of 3,000 bottles. Kilchoman, the island's only farm distillery, was founded by Anthony Wills in 2005.
The distillery malts its own barley and bottles on the farm, a barley to bottle approach that the Genesis series celebrates step by step. Matured across ex-Bourbon, Cognac and Oloroso casks, the three woods layer vanilla, grape sweetness and dried fruit.
Bottled at its natural cask strength of 49.1%. The ex-Bourbon gives vanilla, the Cognac a grape sweetness, the Oloroso dried fruit, while peat phenols carry the smoke. A multi-cask farm malt from the Genesis series.
