Description
Genesis is a Kilchoman series tracing the steps of whisky making, and this is Stage 2, Malting, matured across ex-Bourbon, Sauternes and Oloroso casks. An outturn of 4,200 bottles. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.
The distillery malts its own barley and bottles on the farm, the process the Genesis series celebrates step by step. Matured across ex-Bourbon, Sauternes and Oloroso casks, the three woods layer vanilla, honeyed fruit and dried fruit.
Bottled at its natural cask strength of 49.2%. The ex-Bourbon gives vanilla, the Sauternes honeyed apricot, the Oloroso dried fruit, while peat phenols carry the smoke. The recorded notes run to malt sweetness, smoke, vanilla, citrus, a cooked malt note and honey. A multi-cask farm malt from the Genesis series.
