La Maison du Whisky bottled this 5 year old 2011 Kilchoman from a rum cask, number 531. An outturn of 264 bottles for France. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.
Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in a single rum cask, the wood adds a molasses sweetness to the young peated spirit.
Bottled at its natural cask strength of 59.4%. The rum cask gives molasses and a soft banana note from its esters while peat phenols carry the smoke. A young rum single cask from a French specialist.
