Description
This is a New Spirit bottling from 2006, Kilchoman's first full year of production, a single cask of the distillery's very early make. At just two years old it is not yet matured whisky but a snapshot of the young farm spirit, from cask 361. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.
The distillery malts its own barley and bottles on the farm, a barley to bottle approach from the very start. Filled into a single ex-Bourbon cask, the spirit had barely begun its maturation when bottled.
Bottled at its natural cask strength of 61.9%. The peated young spirit shows raw smoke and cereal, the ex-Bourbon only lightly touched in. A historic glimpse of Kilchoman's first-year make.
