KI NO BI SEI is the high-proof sibling of Kyoto's flagship gin, bottled at 54.5% to push its Japanese botanicals further forward. Sei means clarity or strength, and the name fits. Made at The Kyoto Distillery, Japan's first dedicated gin house, it leans on yellow yuzu for citrus, hinoki cypress chips for a soft woody nuance, bamboo and gyokuro tea for depth, and green sansho berries for a peppery bite. Each botanical category is distilled separately, then blended, a painstaking method that earns the complexity.
The nose is intense and aromatic, fresh yuzu meeting spicy sansho, floral hints and light wood. The palate arrives full-bodied and powerful, juniper dominant with citrus freshness, pepper, tea and wood accents. The finish is long and warm, spice, tea and a gentle sweetness settling together. It stands up to a characterful G&T with Indian tonic and a yuzu twist, or a strong, stirred Martini.
