Kesselherz Louis Santo Single Rum is an unusual Dominican bottling made from fresh sugar-cane juice rather than the molasses base typical of the country, drawn from a single cask and aged seven years in ex-bourbon wood. It is bottled at 40% by the German independent Kesselherz under the Louis Santo label.
Despite the cane-juice base, the profile reads soft and dessert-leaning. The nose offers caramel, raisin, dates and dried apricot, the palate turns sweet and nutty with spice and raisin, and the finish carries caramel, milk chocolate, wood and more raisin. The sweetness suggests a light dosage rather than a bone-dry agricole-style spirit, so it sits closer to the soft Spanish mould than its cane-juice origin might imply.
